Instant Rice Pudding Recipe

Ingredients:
1 cup: Instant rice,
2 1/2 cup: 1% milk, divided
1/4 tsp: Salt,
1/4 tsp: Cinnamon,
1/8 tsp: Nutmeg,
1/2 cup: Sugar,
1/4 cup: Raisins,
4: Egg whites, or 2 egg-beaters which is cheaper, BTW?
1/2 tsp: Vanilla,
Directions:
Combine rice, 2 cups milk, salt, cinnamon, nutmeg, sugar, & raisins. Bring
to a rolling boil, stirring constantly. Reduce heat; boil slowly 10
minutes, stirring occasionally. Beat egg whites until just foamy, then mix
with remaining milk. Slowly add to hot mixture, stirring constantly. Cook
over medium heat until thickened. Add vanilla. Let cool 10 minutes.
Recipe called for 2 eggs, & I just substituted the egg whites... Seemed to
work OK.
The recipe didnt have the nutrition info, but when I looked everything
up, it was very low, & divided by 6 servings, it was even lower (as far as
fat content). :)
