Lemon-poppyseed Muffins/ Low-fat Recipe

Ingredients:

1 3/4 cup: All purpose flour,
1/3 cup: Plus 2 T sugar,
1 T: Plus 2 t poppyseeds,
2 t: Baking powder,
1/4 t: Salt,
1 cup: Skim milk,
3 T: Vegetable oil,
1 T: Grated lemon rind,
1 T: Fresh lemon juice,
1: Egg, slightly beaten
Vegetable cooking spray,
Directions:
Combine first 5 ingredients in a large bowl; make a well in the center of
mixture. Combine milk and next 4 ingredients Stir well. Add to dry
ingredients, stirring just until moistened. Divide batter evenly amoung 12
muffin cups coated w/cooking spray. Bake at 400 degrees for 25 min. or
until golden brown. Remove from pan immediately & cool on wire rack.
