Pork Chops And Sweet Potatoes Recipe

Ingredients:
Salt and Pepper to taste,
3/4 cup: All purposeflour,
4: Loin or rib pork shops, cut
3/4: - 1" thick,
2 tbsp: Cooking oil, (I would use
Olive oil),
4: Sweet potatoes, cooked,
Peeled and cut into pieces,

SAUCE
2 tbsp: Margarine or butter,
1/2 cup: Current jelly,
1/2 cup: Orange juice,
1 tbsp: Lemon juice, fresh please
Rind of 1 limon, grated
1 tsp: Dry mustard,
1 tsp: Paprika,
1/2 tsp: Ground ginger,

Directions:
In a shallow pan, combine salt, pepperand flour. Dredge chops in flour
mixture, then brown in hot oil in frying pan. In saucepan, combine all
sauce ingredients, mixing well; simmer for 3minutes. Arrange chops and
sweet potatoes in shallow baking dish. Pour 2/4 cut of the sauce over
chops and potatoes, bake, uncovered at 350 for 40-45 minutes. Baste with
remaining sauce while baking.
