Directions:
Saute pecans in butter, stirring constantly, about 5 minutes or until
toasted. Set aside to cool.Beat eggs in a large bowl at medium speed of an
electric mixer until frothy. Add next 3 ingredients, beating well. Fold in
whipped cream.Combine 1 cup sugar and remaining milk in a saucepan. Cook
over low heat, stirring constantly, until mixture begins to boil; remove
from heat. Place remaining 1 cup sugar in a small saucepan; cook over
medium heat, stirring mixture constantly, until sugar dissolves and forms a
smooth liquid. Stir in the sauteed pecans. (Mixture may form lumps.)Stir
pecan mixture into sugar and milk mixture; break apart pecan lumps. Stir
into egg mixture.Pour into freezer can of a 5-quart hand-turned or electric
freezer. Freeze according to manufacturers instructions. Let ripen at
least 1 hour. Yield: about 1 gallon.
