Salmon Bisque Recipe

Ingredients:
1 large: Onion, diced,
1 tbsp: Olive oil,
2 tbsp: Flour,
2 1/2 cup: Defatted chicken broth,
1 1/2 cup: Tomato puree,
1 lbs: Salmon fillet, cut into 1/2 inch chunks,
2 tbsp: Snipped fresh parsley,
2 cup: Evaporated skim milk,

Directions:
In a 3-quart saucepan, saute the onions in the oil until translucent, about
5 minutes. Add the flour and cook until light brown, about 3 minutes.
Add the broth, tomato puree, fish and parsley. Simmer for 10 minutes. Add
milk and heat through.
