Judys Chicken And Broccoli With Rice Recipe

Ingredients:
1 1/2 cup: Water,
-into strips,
1/2 cup: Milk,
1 1/2 cup: Frozen broccoli cuts, thawed
2 tbsp: Dijon mustard,
2 tbsp: Oil,
1 1/2 cup: Long grain rice,
10 3/4 ounce: Can condensed cream of,
1/2 cup: Cheddar or Swiss,
-chicken soup,
-cheese, grated or shredded
2 tbsp: Chopped pimento,
1 lbs: Boneless chicken breasts, cut

Directions:
Bring water to a boil. Stir in rice. Cover and remove from heat. Let
stand 5 minutes or until all water is absorbed. Meanwhile, cook and
stir chicken in hot oil until lightly browned. Stir in soup, milk,
mustard and cheese; add broccoli and pimento. Bring to a full boil.
Reduce heat and simmer 2 minutes. Pour over rice.

Makes 6 servings.
