Coconut Chicken With Fresh Fruit Recipe

Ingredients:
8 each: Boneless skinless chicken breast halves,
2 tbsp: Butter or margarine,
1 tbsp: Fresh ginger root, chopped
Salt, to taste
1/3 cup: Flaked coconut, toasted & divided
1 cup: Whipping cream,
3 each: Bananas, quartered
1 large: Papaya, peeled, seeded & sliced

Directions:
Melt butter in large skillet over medium-high heat; add chicken and
cook 4 minutes on each side or until lightly browned. Sprinkle with
ginger, salt, and 3 T coconut; add whipping cream. Cover and cook
over low heat 10 minutes. Arrange chicken, bananas and papaya on a
large platter. Pour warm sauce over chicken and sprinkle with
remaining coconut. Garnish with lime wedges and Italian parsley.
