Confetti Rice~ (1982) Recipe

Ingredients:
1/4 cup: Butter or margarine,
1/2 cup: Chopped onion,
1/2 cup: Green pepper, chopped
1 cup: Rice,
1/2 cup: Pimiento, chopped
10 1/2 ounce: Can condensed consomme,
3/4 cup: Water,
1/4 tsp: Monosodium glutamate,
1/8 tsp: Salt,
Directions:
Melt butter in 2-quart saucepan. Add onion and green pepper. Cook
until tender but not browned. Add rice, pimiento, consomme, water,
monosodium glutamate and pepper. Bring to boil. Stir once, cover and
cook over low heat 24 minutes or until rice is tender and all liquid
is incorporated. Makes 4 to 5 servings.
Per serving: Calories 317; fat 12.6g; cholesterol 31mg; carbohydrates
44.2g; dietary fiber 1.2g; protein 7.7g; sodium 5194mg. Good source of
vitamin A.
