Grilled Eggplant Cheeseless Pizza Recipe

2 1/2 kilo: Pizza dough,
2 kilo: Eggplant sliced,
500 gram: Red onions sliced,
200 gram: Sun dried tomato,
200 gram: Cilantro,
1 1/2 Litres: tomato sauce,
700 gram: Fresh spinach,
50 gram: Garlic,
50 milliliter: Olive oil,

Panfry eggplant with garlic and olive oil. Spread pizza dough, top
with tomato sauce, then eggplant, sundried tomatoes, fresh spinach,
red onions and cilantro. Cook. Serve with herbed mustard vinaigrette
