Kellogs Double Coated Chicken Recipe

Ingredients:
7 cup: Kellogs corn flakes,
. crushed to about 2 cups,
1: Egg,
1 cup: Skim milk,
1 cup: All-purpose flour,
1/2 tsp: Salt,
1/4 tsp: Pepper,
3 lbs: Chicken pieces, with or
. without skin,
3 tbsp: Margarine, melted
Directions:
Place cereal into a shallow dish or pan. Set aside.
In a small mixing bowl, beat the egg and milk slightly. Add the
flour, salt and pepper. Mix until smooth. Dip the chicken in the
batter. Coat with cereal. Place in a single layer, skin side up, in
a foil-lined shallow baking pan. Drizzle with margarine.
Bake in a preheated oven at 350
F about 1 hour or until the chicken is
tender, no longer pink and the juices run clear. Dont cover the pan
or turn the chicken while baking.
