Mixed-fruit Compote In Ginger Syrup - Bon Appetit Recipe

Ingredients:
2 cup: Water,
1/2 cup: Sugar,
12: Quarter-size slices peeled fresh ginger,
8: Thin slices peeled seeded cantaloupe,
4: Strawberries, huued, halved
2: Apricots or plums, pitted, halved
1: Star fruit, (carambola), sliced OR
1 cup: Sliced peeled quartered pineapple,
1: Kiwifruit, peeled, sliced
1 tbsp: Fresh lime juice,

Directions:
Combine water, sugar and ginger in heavy medium saucepan. Bring to
boil, stirring until sugar dissolves. Boil until liquid is reduced to
1 C, about 15 minutes. Cool to room temperature.

Arrange all fruit in shallow bowl. Sprinkle with lime juice. Strain
syrup over fruit. Remove 3 ginger slices from strainer; cut into
matchstick-size strips. Sprinkle strips over fruit. Cover and chili
at least 3 hours or up to 8 hours.

Arrange compote on plates; spoon some syrup over and serve cold.
