Yoghurt, Cucumber And Garlic Dip (tzatziki) Recipe

Ingredients:
1 large: Cucumber peeled lengthwise leaving every second strip unpeeled,
2: , (or 3) Garlic cloves, peeled and crushed with salt with the blade of a knife
1 lbs: Thick yoghurt,
2 tbsp: Oil,
1 tbsp: Vinegar or lemon juice,
GARNISH
Sprigs of mint or dill,
Directions:
Cut the cucumber into very small dice and combine with the garlic and
salt. Beat together the yoghurt, oil and vinegar and fold into the
cucumber. Spoon the dip into a bowl and garnish with mint or dill.
This can be served with fried eggplant and crusty bread.
