Leafy Greens With Lime & Chilies Recipe

Ingredients:
6 tbsp: Virgin olive oil,
1/4 cup: Lime juice,
1 1/2 lbs: Spinach, washed and
1 tbsp: Red pepper flakes,
-chopped,
1 tsp: Sugar,
1 tsp: Garlic, minced
Salt and pepper,
Directions:
In your largest saute pan, heat the oil over high heat until very hot
and just beginning to smoke. Add the spinach and stir furiously
until the spinach has turned bright green and becomes slightly
wilted, about 1 minute. Add the garlic and cook for 20 seconds more.
Add the lime juice, red pepper flakes, sugar, salt and pepper. Cook,
still stirring vigorously, for an additional 10 to 15 seconds.
Remove from the heat and serve at once.
