Baked Vegetable Stuffing Recipe

Ingredients:
2: Carrots, peeled, chopped
, salt and pepper to taste
1: Celery stalk, fine chopped
1/4 cup: Vegetable stock,
1 medium: Onion, fine chopped
1/4 cup: Wine, can sub with more
1: Zucchini, cubed
-vegetable stock,
1 cup: Mushrooms, chopped
1/2 tsp: Sage,
5 slice: Bread, crusts removed,
1/2 tsp: Thyme,
-cubed,
2 tbsp: Fresh parsley, chopped
3 tbsp: Lemon juice,
-OR 1T dried,
Directions:
Combine the first 8 ingredients in a casserole dish.
In small bowl, combine the rest.
Whisk the above together and then pour over the vegetable mixture.
Cover and bake 35 mins at 350. A baked sweet potato dish would go
great with this.
