Vegetarian Padadise Pizza Recipe

Ingredients:
1 cup: Small broccoli florets,
1 tsp: Salt,
2 tbsp: Olive oil,
1/2 tsp: Basil,
1 cup: Eggplant, diced
1/4 tsp: Pepper,
1 tbsp: Olive oil,
1/2 cup: Marinara sauce,
1 1/2 cup: Yellow squash, diced
2 cup: Fresh mozzarella, diced --
1 cup: Snall zucchini, diced
Divided,
1/2 cup: Red onion, chopped
1: Plum tomato, diced

Directions:
Preheat oven to 450~. Cook broccoli in boiling salted water 2 minutes;
drain. Heat olive oil and add eggplant and cook 10 to 12 minutes until
tender. Add 1 tb more oil, squash, zucchini, onion, salt, basil and
pepper. Cook, stirring occasionally, until veggies are tender and
golden, about 8 minutes. Spread sauce over crust. Top with 1 c
cheese, then veggies. Sprinkle 1 more c cheese and tomatoes. Bake 10
minutes. Per Slice: 380 Cal, 21 Gr Fat.
