Warm Squash Slaw - Country Living Recipe

Ingredients:
1 tbsp: Olive oil,
1/4 cup: Cider vinegar,
1/2 cup: Chopped green onions,
2 tbsp: Firmly packed light-brown,
1 Small: , (1 lb) cabbage,
-sugar,
-coarsely shredded,
3/4 tsp: Salt,
1: , (1 1/4-lbs) butternut
1/4 tsp: Ground black pepper,
-squash, coarsely shredded
1/4 tsp: Caraway seeds,
Directions:
1. In large skillet, heat oil; add green onions and saute until
wilted. Add cabbage; stir-fry 5 minutes or until it is slightly
tender.
2. Stir in squash, vinegar, brown sugar, salt, pepper, and caraway
seeds. Cover and cook over low heat, stirring occasionally, 5 minutes
or until cabbage is wilted. Serve slaw immediately.
