Blueberry Oat Mufflns Recipe

Ingredients:
1 cup: Quick-cooking oats,
1/2 tsp: Salt,
1 cup: Milk, sour
1 each: Egg, beaten
1 cup: All-purpose flour,
1/4 cup: Butter or margarine --,
3/4 cup: Packed brown sugar,
Melted,
1 tsp: Baking powder,
1 cup: Fresh blueberries,
1/2 tsp: Baking soda,

Directions:
In a bowl, combine oats and milk: let stand a few minutes. In another
bowl, combine flour, brown sugar, baking powder, baking soda and
salt; mix well. Stir egg and butter into oat mixture. Add oat mixture
all at once to dry ingredients. Stir just until moistened. Gently
fold in blue-berries. Fill well-greased muffin tins 3/4 full. Bake at
400 deg. for 15-20 minutes. Yield: 12 muffins. (*To sour milk, place
1 tablespoon white vinegar in a mesureing cup; add enough milk to
equal 1 cup.)
