Hopping John - Sl 1/90 Recipe

Ingredients:
1 cup: Celery, sliced
-chicken broth, undiluted
2/3 cup: Onion, chopped
1 each: 16-oz package frozen black-,
1 centiliter: Garlic, minced
-eye peas,
1 tbsp: Vegetable oil or bacon,
1/2 lbs: Cooked ham, cut into cubes
-drippings,
1/4 tsp: Crushed red pepper,
4 cup: , Water
1 each: Bay leaf,
2 each: 10-3/4 oz cans condensed,
3 cup: Cooked long-grain rice,

Directions:
Saute celery, onion, and garlic in vegetable oil or bacon
drippings in a large Dutch oven until tender. Add water and
remaining ingredients except rice. Bring to a boil; cover, reduce
heat, and simmer 40 minutes or until peas are tender. Remove and
discard bay leaf, and serve over rice. Yield: 12 side dish servings
or 6 main dish servings.

Note: To cook rice with black-eyed peas, stir 1 cup uncooked
ong-grain rice into peas after 40 minutes, and simmer an additional
35 minutes.
