Mashed Potatoes With Olive Oil Recipe

Ingredients:
3 lbs: , to 3 1/2 lb
4: Garlic clove, (s), peeled
Yukon Gold potatoes,
1/2 cup: Extra-virgin olive oil,
Peeled, cut in 1/2" pieces
6 tbsp: Butter,
Directions:
Cook potatoes and garlic in large saucepan of boiling salted water
until tender, about 15 min. Drain, reserving 1/2 cup cooking liquid.
Place potatoes and garlic in large bowl. Add oil and butter and mash
until smooth, adding some reserved cooking liquid if necessary to
moisten. Season to taste with salt and pepper.
