Tahini-miso Sauce Recipe

Ingredients:
1 tbsp: Oil,
1 1/4 cup: , water or vegetable stock
3 tbsp: Whole wheat pastry flour,
2 tbsp: Miso,
1/4 cup: Tahini,
Directions:
Heat the oil in a small saucepan. Add the flour and cook, stirring
constantly, until the flour is lightly browned and begins to give off
a nutty aroma.
Remove the pan from the heat and stir in the tahini.
Add a small amount of water and stir vigorously to form a paste.
Return th epan to the heat and slowly add the remaining water.
Stirring continuously, cook the sauce until the desired consistency
is reached. If the sauce is too thick, add a little water.
Remove from the saucepan from the heat and add the miso. Stir well.
Variation:
Saute 1/2 cup of finely chopped onion in the oil before adding the
flour. Mix well and proceed as indicated above.
