Coconut Parfaits Recipe

Ingredients:
1/2 cup: Coconut, shredded
2 cup: Skim milk,
2 medium: Bananas sliced,
1/2 cup: Pistachios chopped,
1 package: Vanilla pudding instant,
Directions:
In small sauce pan, toast coconut, tossing often. cool. Slice bananas,
prepare pudding as to directions, but use low fat milk. into 4 parfait
glasses, spoon half pudding, top with bananas, half coconut, remaining
pudding, top with pistachios and coconut. 1 serving. 275 calories, 8
g fat, 5 mg cholesterol, 460 mg sodium.
