Cool, Creamy Black Bean Soup Recipe

Ingredients:
4 cup: Black beans, rinsed and
1/2 t: Balsamic vinegar or lemon,
-drained, 3-15 oz cans
-juice,
1 1/2 cup: Plain non-fat yogurt,
Salt to taste,
1 can: Mild peeled green chilies,
Pepper to taste,
-, 4 1/2 oz
1 tbsp: Snipped chives or sliced,
2 t: Cumin,
-green onions,
Directions:
Puree all ingredients but chives or onions in blender or food
processor. Serve cold, topped with a dollop of yogurt and sprinkled
with chives or onions.
Per serving: 292 calories, 21 grams protein, 51 grams carbohydrates,
16 grams fiber, 1 gram fat, 337 milligrams sodium.
