Hot Smoked Fillets Of Whiting With Truffle Vinaigrette Recipe

Ingredients:
SOURCE: AUSTRALIAN VOGUE WIN
1 each: Fillet King George whiting,
2 small: Fillets of whiting if not,
-per person, (or
-in SA),
TRUFFLE VINAIGRETTE
4 T: Olive oil,
1 T: Truffle juice,
1 T: Sherry vinegar,
Salt and pepper,
Directions:
Season fillets and smoke over a mixture of wood chips until cooked.
Dress with chopped truffles and vinaigrette. To make vinaigrette:
shake ingredients in a bottle to mix well. Tansy Good and Marc Bouten.
