Mocha Walnut Wonder Muffins Recipe

Ingredients:
3: Eggs,
1 1/4 cup: Whole wheat flour,
3/4 cup: Oil,
1 cup: Brown sugar,
1 cup: Buttermilk,
1/2 cup: Baking powder,
1/2 cup: Liquid Coffee, strong black
1 tsp: Baking soda,
1 tsp: Vanilla extract,
1 tsp: Salt,
1/2 cup: Cocoa, sifted, (then
1 cup: Walnuts,
-measured),
1 cup: Chocolate chips, (optional)
1 1/2 cup: White flour,
Directions:
Combine the eggs, oil, buttermilk, coffee and vanilla, and set aside.
Stir the rest of the ingredients, except for the nuts and chocolate
chips, into a separate bowl. Add the nuts and chocolate chips. Add
the dry mixture to the wet, and mix quickly. Do not overmix. Spoon
the batter into prepared muffin tins. Bake 375 degrees for 20 to 25
minutes, or until done. Test with a toothpick inserted into the
center of a muffin. When it come out clean, the muffins are done.
