Baked Leeks With Bacon And Gruyre Recipe

Ingredients:
1 ounce: Bacon, cut in small dice
1 ounce: Gruyre cheese, grated
1 large: Egg,
-, about 1/3 cup
1/4 cup: Milk,
1 Recipe: Steamed Leeks,
1/4 cup: Chicken stock or broth,
1 tbsp: Dry bread crumbs,
Salt and white pepper,
1 tbsp: Parsley, minced
Directions:
1. Adjust oven rack to center position and heat oven to 350
F. Fry
bacon in small skillet over medium-high heat until fat is rendered
and bacon is crisp, 3-5 minutes. Drain fat; set bacon aside to cool.
2. Whisk egg, milk, chicken stock, and salt and pepper to taste in a
small bowl. Stir in cheese.
3. Arrange leeks in single layer in baking dish. Pour egg mixture over
leeks; sprinkle with bacon bits and bread crumbs. Bake until top is
browned and egg mixture is set, about 30 minutes. Sprinkle with
parsley and serve.
