Mackerel In Tomato Sauce Recipe

Ingredients:
2 tbsp: Olive oil,
3 lbs: Mackerel fillets, cut
1 small: Onion, sliced
-into 4 pieces,
1/2 Clove: garlic, peeled and
1 tbsp: Chopped parsley,
-chopped,
1 8-ounce can: tomatoes,
2 tbsp: Water,
Undrained,
1/2 tsp: Salt,
Parsley sprigs, for
1/2 tsp: Pepper,
Garnish,
Directions:
1. Place olive oil, onion, garlic, and parsley in large skillet; saute
until onion is browned. 2. Add tomatoes, water, salt, and pepper to
onion mixture; simmer for 5 minutes. Add mackerel, cover, and simmer
for 5 minutes. Turn mackerel over; cook for 10 minutes more. 3.
Transfer fish to serving platter; garnish with parsley sprigs. *From
