Tuna With Orange And Ginger Recipe

Ingredients:

1 T: Orange marmalade,
1 cup: Fresh-squeezed orange juice,
1/2 t: Minced peeled ginger,
2 t: Peanut oil,
1 lbs: Tuna steaks,
4 each: Scallions, chopped, garnish
DIRECTIONS
Directions:
In a small bowl, combine marmalade, juice, ginger and oil. Place tuna
steaks in a single layer in an ovenproof glass baking dish and pour
juice mixture over them. Marinate for about 30 minutes. Preheat the
broiler or prepare the grill. Reserving marinade, place tuna under
the broiler or the grill and cook until cooked through, about 4-5
minutes on each side. Meanwhile, in a small saucepan or
microwave-safe dish, heat reserved marinade until just bubbly. Spoon
over cooked tuna and sprinkle with scallions before serving. Serve
with steamed baby carrots and slices of yellow squash.
