Coconut Jumbles Recipe

Ingredients:
1/2 cup: Butter (or marg.), softened
1/8 tsp: Salt,
1/4 cup: Sugar,
1 tsp: Vanilla extract,
1: Egg, beaten
1: Egg white, slightly beaten
1 1/4 cup: Flour, all-purpose
Coconut, shredded
1/2 tsp: Baking powder,
Directions:
Cream butter; add sugar gradually, continuing to cream. Add eggs;
blend well. Combine flour, baking powder, and salt; add to creamed
mixture, beating well. Stir in vanilla.
Roll out dough about 1/8" thick on a lightly floured board; cut with
doughnut cutter. Brush tops with egg white; sprinkle with coconut.
Bake at 400 degrees for 8 minutes or until a delicate brown.
