Tamarind Pulp Recipe

Yield: 2 1/2 cups

Ingredients:
11 ounce: Dried tamarind,
2 1/2 cup: Hot water,

Directions:
Soak dried tamarind overnight in hot water or boil it for 15 minutes
over medium heat.

Rub tamarind through your fingers to reduce it to a pulp, then rub
through a sieve and collect the pulp. Discard the husks. Excess pulp
can be frozen.
