Boston Brown Bread (microwave) Recipe

Ingredients:
1 1/4 cup: Whole wheat flour,
1 1/4 cup: Corn meal,
1 1/4 cup: Rye flour,
1 tsp: Baking soda,
1/2 tsp: Salt,
2 1/2 cup: Buttermilk,
1 cup: Dark molasses,
1 cup: Raisins,
Directions:
Sift together the dry ingredients in a large mixing bowl. Add the
buttermilk, molasses and raisins. Mix by hand until well blended. Divide
the mixture into 2 parts. Place each in a waxed paper lined baking dish
that are 10 x 6 x 1-3/4. Cover each with a plastic wrap. Microwave one loaf
at a time on medium (50%) for 22 - 24 minutes. Turn dish a half turn
halfway through cooking. Remove plastic wrap. Place on a solid surface for
about 10 minutes before removing from baking dish.
Makes 2 loaves
