What I Think Is Traditional Chutney Recipe

Ingredients:
4 cup: Ripe mango, peeled and sliced
1/2 cup: Lime, *seeded and chopped
1 cup: Onion, chopped
1/2 cup: Fresh ginger, grated
3 Cloves: garlic, peeled and minced
3/4 cup: White raisins,
2 cup: Light brown sugar,
1 cup: Apple cider vinegar,
1/4 cup: Fresh orange juice,
1/4 cup: Fresh lemon juice,
1 tbsp: Mustard seed,
1 tsp: Crushed red pepper, * see note
1 tsp: Ground cinnamon,
1/4 tsp: Ground cloves,
Directions:
Makes 4 half-pints.
Place all ingredients in heavy pot over medium heat. Bring to a boil. Lower
heat & simmer for about 20 minutes, stirring frequently. Remove from heat,
cover, & let stand for about 12 hours. Again bring to a boil, lower heat &
cook for 15 minutes, stirring frequently.
Process for 15 minutes in boiling water bath.
Per serving: 1307 Calories; 4g Fat (3% calories from fat); 6g Protein; 335g
Carbohydrate; 0mg Cholesterol; 714mg Sodium
NOTES : * Chop lime by hand, try 1 1/2 teaspoon hab powder
