Zucchini (apple) Pie Recipe

Ingredients:
FILLING
PART A
8 cup: Peeled and sliced zucchini, seeded and shaped to look like apple slices
2/3 cup: Lemon juice or vinegar,
PART B
1 cup: Sugar,
1 tsp: Cinnamon,
CRUMB CRUST
4 cup: Flour,
1 cup: Sugar,
1 1/2 cup: Margerine,
Directions:
Cook "A". Boil until tender, about 10 minutes. In the meantime, prepare the
crumb crust mixture below. Add "B". Simmer 1 minute Add 1/2 cup of the
crumb mixture (this thickens the mixture) Pour this mixture over the bottom
crust. Sprinkle remaining crumbs over the top. Bake at 350 F for about 30 -
35 minutes. Chill
Crumb Crust: Crumble together and press 1/2 into a 9 x 13 inch pan. Posted
