Ingredients:
1 tsp: Oil,
12 ounce: Potatoes, (red are nice)
6: Eggs,
1/4 cup: Salsa,
1/4 cup: Grated cheese,
S & P,

Directions:
Preheat oven to 425. Wash potatoes & cut small cubes.Leave skin on. Saute
in pan a few minutes then cover for 10 minutes. Combine the rest of the
ingredients & pour over potatoes in pan. Cover and cook for 3 minutes.
Remove cover & cook in oven for 4-6 minutes until set.
