Directions:
I asked on the Internet for help in preparing pasta without tomatoes.
Margie Heisler replied: "I have a variety of ways to
make pasta delicious without the use of tomato sauce. Try a little pesto or
possibly some olive oil and various Italian herbs. Add any additional
ingredients you would have in the house ... vegetables, leftover chicken
... etc. It can make a plain pasta dish really special and only takes
minutes to prepare!"
Kelly Grigg said: "Hmm - you might try using tomatillos
.. its the green tomato like fruit (?) that is used a lot in Mexican
cooking ... partiularly green salsas. I may be wrong, but I think I read
once that it is NOT a relation of the tomato. It can be found in many
grocery stores these days, usually near the fresh peppers. It is the size
of a large cherry tomato, and is covered by a leathery leafy husk that you
pull away to reveal what looks like a small green tomato, The taste is
sharper than a tomato, but I really like them. If youd like, I can look
for a good tomatillo salsa recipe for you. "Anyway, you might research this
one ... you will miss out on the great red color of the tomato, but might
get a similar taste without the problems."
And Chris Palmer said "... try your pureed
apricot/peaches idea with something like tamarind liquid and/or pomegranate
molasses added."

Title: Ile Flottante Eng.

-----------------------------------CREAM-----------------------------------
1/4 lb Sugar; (less 1 tbs)
4 c Milk
1 Vanilla bean
8 Egg yolks

---------------------------------THE ISLAND---------------------------------
8 Egg whites
8 tb Sugar
1 ts Cream of tartar
A few drops of vanilla

Cream:

1.Beat yolks with sugar until lemony colored,very pale yellow

2. Bring the milk to a boil with the bean { sliced in half)

3. Remove the vanilla bean and pour the hot milk slowly , still
beating,over the yolks.OFF THE HEAT

4. Bring the mixture back to very slow heat and stir with a wooden spoon or
spatula just until it coats the spoon. DO NOT LET It BOIL!!!!!! Should take
about 3 minutes in the heat.

The Island:

5. Whip whites until very firm.

6. Add sugar 2 T at a time whipping to a smooth batter.Add vanilla

7. Butter a tube pan and pour in the batter.

8. Bake in a pre heated 350 F oven in a water bed for 15 minutes.

9. Let cool and unmold.

10. Pour the cream around the unmolded island(egg whites) and they will
float.

11. Make a caramel and drizzle it over the island.
