Microwave-dried Tomatoes Recipe

Paul asked whether its possible to make dried tomatoes at home. Im also
new to the list and whether were re-covering old territory, but Gourmet
magazine published a recipe for making dried tomatoes in the microwave
which Ive made several times. I used the tomatoes which are available to
me in Madras, and used newspaper instead of unavailable paper towels. It
makes only a small quantity, and it calls for storing the tomatoes in olive
oil, which I used to do. But I should think that it would be safe to store
the dried tomatoes in the fridge. You have to be watchful toward the end of
the process, or the tomatoes can turn to cinders:
Season the tomatoes with salt, arrange them, cut sides up, in a spoke
pattern on several layers of microwave-safe paper towels in a microwave
oven, and microwave them at medium power (50%), burning the towels 180
degrees once and removing the tomatoes as they dry, for 30 to 45 minutes,
or until they are dry to the touch. (The tomatoes should still be slightly
moist inside; be careful not to let them burn.) Transfer the tomatoes to a
rack and let them stand at room temperature overnight.
