Nixtamal (hominy) Recipe

Ingredients:
3 lbs: White corn,
2 tbsp: Lime,
3 quart: Water,

Directions:
Place corn in kettle, add water and lime and allow to boil for 2 hours, or
until corn begins to peel.

Remove from fire and cool. Rub corn between the hands until skin and kernel
separate, and rinse in cold water until white.
