Pina Colada Muffins Recipe

Ingredients:
1/2 cup: Sugar,
1: Egg,
1/4 cup: Margarine,
1 cup: Sour cream,
1/2 tsp: Salt,
1 tsp: Rum extract,
1 1/2 cup: Flour,
1 tsp: Baking powder,
1/2 cup: Coconut,
1/2 tsp: Baking soda,
1 can: , (small) drained crushed pineapple
Directions:
Reheat oven to 375
F, prepare pans. Combine sugar, egg, margarine, sour
cream & rum extract & beat until blended. Stir together dry ingredients &
add, stir until just mixed. Add pineappale & coconut. Spoon into pans &
bake for 20 mins. Makes 8-9 large muffins.
