Oyster And Eggplant Soup Recipe

Ingredients:
1 pint: oysters,
2 cup: oyster liquor,
2 ribs: celery,
4 tablespoon: butter,
2 medium: eggplants,
4 large: cloves garlic,
1 cup: heavy cream,
2 tablespoon: flour,
1: salt & pepper to taste,

Directions:
Peel eggplants and cutinto cubes. Puree oysters, eggplant, celery and
garlic. Make a light roux with the flour and butter. Bring the
oyster liquor to a boil and add roux. Let simmer for 15 minutes.
Add cream and simmer for 5 minutes. Add salt and pepper to taste.
