Minestrone Napoli Recipe

Ingredients:

3 large: tomatoes, peeled, seeded, & chopped
1 bunch: green onions, chopped
2 medium: carrots, peeled, chopped
1/4 cup: fresh parsley, chopped
1 centiliter: garlic, crushed
2 tablespoon: fresh basil leaves, chopped
1 can: 15-oz. red kidney beans, drained
2: zucchini, sliced
2 cup: cabbage, shredded
1/2 teaspoon: fresh oregano, chopped
1/2 teaspoon: salt,
1/8 teaspoon: pepper,
5 cup: beef broth or bouillon,
1/4 cup: dry red wine,
2 cup: cooked small elbow pasta,
1/4 cup: parmesan cheese, grated, opt
Directions:
In slowcooker, combine tomatoes, green onions, carrots, parsley, garlic,
basil, kidney beans, zucchini, cabbage, oregano, salt, pepper, broth, and
wine. Cover and cook on LOW 8 to 9 hrs. Stir in cooked pasta. Sprinkle
with cheese.
