Black Forest Pumpernickel Recipe

1 1/2 LB LOAF
1 1/8 cup: Water plus 2 tbs,
1 1/2 cup: Bread flour,
1 cup: Rye flour,
1 cup: Whole-wheat flour,
1 1/2 tsp: Salt,
1 1/2 tbsp: Oil,
1/3 cup: Molasses,
3 tbsp: Cocoa,
1 tbsp: Caraway seeds,
2 tsp: Active dry yeast,
1 LB LOAF
3/4 cup: Water plus 1 tbs,
2/3 cup: Bread flour,
2/3 cup: Rye flour,
2/3 cup: Whole-wheat flour,
1 tsp: Salt,
1 tbsp: Oil,
3 tbsp: Molasses,
2 tbsp: Cocoa,
2 tsp: Caraway seeds,
2 tsp: Active dry yeast,
Directions:
Place all ingredients in bread pan, select Light Crust setting and
press Start.
After baking cycle ends, remove bread from pan, place on cake rack,
and allow to cool 1 hour before slicing.
