Braised Leeks & Mushrooms Recipe

Ingredients:
1/4 cup: Dry sherry,
1 tsp: Olive oil,
5 cup: Thinly sliced leeks,
1 cup: Thinly sliced shiitakes,
1 tsp: Fresh orange juice,
1/2 tsp: Grated orange peel,
1 tbsp: Apple cider vinegar,
Salt & pepper to taste,
Directions:
In a large skillet, over medium heat, combine sherry & oil. Heat to
simmering. Add leeks, stirring frequently for 3 minutes. Add
mushrooms & saute for 5 minutes. Stir in orange juice, peel &
vinegar. Remove from heat. Add seasonings & serve warm.
