Ozor Na Szaro (beef Tongue) Recipe

Ingredients:
4 lbs: Beef tongue,
Onion,
Peppercorns,
3 quart: Water,
Bay leaves,
SAUCE
3 tsp: Sugar, granulated
1 tbsp: Butter, unsalted
2 cup: Broth from boiling tongue,
1 tsp: Vinegar,
1/2 tsp: Lemon rind,
1/2 cup: Almonds, blanched, chopped
3 tsp: Water,
1 tbsp: Flour, all purpose
2 tsp: Lemon juice,
1/2 cup: Raisins,
Directions:
Boil tongue with other ingredients until tender, about 2 hours. Cool.
Remove outside skin and roots. Slice thin. Save broth. Make Sauce.
Sauce: Carmelize the sugar and water. Add butter,flour and broth and
boil to the bubbling stage. Add remaining ingredients. Add sliced
tongue and bring to a boil.
