Pina Colada Fool Recipe

Ingredients:
1 cup: Drained unsweetened crushed pineapple,
1 1/2 cup: Whipping cream,
1/2 cup: Sweetened shredded coconut,
1 tbsp: Coconut liqueur or rum, opt
Mint sprigs, opt
Directions:
In blender or food processor, puree half of the pineapple; add to
remaining pineapple. In separate bowl, whip cream; fold in
pineapple, coconut and coconut liqueur (if using).
Divide among 6 long stemmed glasses. Chill for 1 hour. Garnish with
