Red Cabbage & Apples Recipe

Ingredients:
2 lbs: Red cabbage, finely shredded
8 each: Juniper berries, crushed
1/4 pint: Boiling water,
1 tsp: Salt,
8 ounce: Onions, chopped
8 ounce: Apples, chopped
2 ounce: Soft brown sugar,
1 tsp: Caraway seeds,
1 each: Bag bouquet garni,
1 tbsp: Cornstarch,
3 tbsp: Malt vinegar,
1 tbsp: Cold water,
Directions:
Place red cabbage, junipers, 1/4 c boiling water & salt in a large
pot. Bring to the boil, cover & simmer for 30 minutes. Stir in
remaining water, onions, apples,sugar, caraway seeds & bouquet garni.
Cover & cook gently for 1 1/2 hours, stirring frequently.
Remove bouquet garni. Blend cornstarch with the vinegar & cold water
till smooth. Stir into the cabbage & cook uncovered for 10 minutes.
Stir often to prevent sticking.
