Remoulade Mayonnaise Recipe

Yield: 1 1/4 cups

Ingredients:
1 cup: Prepared mayonnaise,
1: Scallion, 3 inches of green left on
2 tsp: Tiny capers, chopped
1 tbsp: Flat leaf parsley, chopped
1 tbsp: Dijon-style mustard,
2 tsp: Whole-grain mustard,
1 tsp: Tarragon vinegar,
1/4 tsp: Tabasco sauce,
Salt and freshly ground,
Black pepper, to taste

Directions:
Combine all of the ingredients in a small bowl. Refrigerate, covered,
until time to use.

Makes 1 1/4 cups. Per 1 tablespoon: 82 calories, .3g carbohydrates,
.2g protein, 9g fat,
6 mg cholesterol

This is a lovely dipping sauce to make fresh. Its similar to tartar
sauce but with the spices of Louisiana.
