Snacks-to-go: Peanut Butter Waffles Recipe

Ingredients:
1 1/4 cup: Whole wheat flour,
2 tsp: Baking powder,
1/4 tsp: Salt,
1/2 cup: Smooth peanut butter,
1/4 cup: Liquid honey,
2: Eggs,
1 1/4 cup: Milk,
1 tsp: Vanilla,

Directions:
Good on their own, these can be served with fresh fruit or spread
with jam. Wrap individually in plastic wrap and freeze to reheat as
need in a toaster. Recipe can be used to make pancakes, also.

In large bowl, stir together whole wheat flour, baking powder and
salt. in separate bowl, whick peanut butter with honey; whisk in
eggs, then milk and vanilla. Pour over dry ingredients, stirring just
until combined.

in 1/3 to 1/2-cup batches or according to manufacturers
instructions, pour batter onto hot greased waffle iron; cook for 3-4
minutes or until golden.

Tip: substitute almond butter for peanut butter - but reduce milk to
1 cup and add up to 1/4 cup more milk if necessary to make pourable
batter.

Per Waffle: about 155 calories, 6 g protein, 7 g fat,
19 g carbohydrate
