Southern Pecan Loaf * Recipe

Ingredients:

PATTI - VDRJ67A
3 cup: Flour,
2 tsp: Baking powder,
1/2 tsp: Salt,
1 cup: Butter or margarine, soft
1 1/2 cup: Sugar,
4: Eggs,
3/4 cup: Milk,
1 tsp: Orange extract,
1 tsp: Almond extract,
1 tsp: Orange rind,
1 cup: Pecans, finely chopped

Directions:
In mixing bowl, combine flour, baking powder and salt. Cream butter
and sugar until light and fluffy. Add eggs, one by one, beating well
after each addition. Add the flour alternately with the milk to the
butter mix, beating until smooth and well combined. Stir in the
flavorings and orange rind. Fold in the pecans. Pour into a greased
and lightly floured 9x5" loaf pan. Bake at 375~ for about 50 minutes
or until tested done. Cool slightly before removing from pan.
