Spinach & Bean Gratin Recipe

Ingredients:
1 tbsp: Sunflower oil,
1: Onion,
225 gram: Mooli or radish,
400 gram: Chopped tomatoes,
400 gram: Cannellini beans,
Seasoning,
225 gram: Frozen spinach,
1 tsp: Ground cuumin,
1 tbsp: Fresh chopped thyme,
100 gram: Breadcrumbs,
Directions:
Preparation: Chop the onion. Halve the mooli lengthways and slice
into semi circles 1. Preheat the oven to 200c/400f/gas 6. Heat the
oil in a large pan
and fry the onion and mooli together for 5 minutes until
softened. 2. Add the tomatoes, cannellini beans, spinach, cumin,
and thyme.
Add seasoning to taste and simmer for 5 minutes. 3. Transfer the
mixture to an ovenproof casserole dish, top with
breadcrumbs and bake for 25 minutes until golden.
