Spinach With Pine Nuts Recipe

Ingredients:
2 lbs: FRESH SPINACH,
4 tbsp: UNSALTED BUTTER,
3 tbsp: OLIVE OIL,
3 each: CLOVES GARLIC, MINCED
CAYENNE PEPPER,
4 tbsp: SEEDLESS RAISINS,
4 tbsp: PINE NUTS,
2 tbsp: PARMESAN CHEESE,
Wash spinach well, drain and cut into coarse shreds. Plunge into
boiling water and drain. Heat 2 tbs of butter and olive oil in,
pan. Add garlic and cayenne to taste. Cook over moderate heat,
for 2-3 minutes. Add raisins and pine nuts. Cook 2 minutes,
more. Mix into spinach until well blended. Arrange on a hot,
flat ovenproof dish. Sprinkle cheese over top. Melt remaining,
butter and pour over the top. Brown quickly under the broiler.,

Stuffing mix
1 c Parmesan cheese
2 pk Frozen chopped spinach
(cooked and well drained)
1/2 lb Mild sausage
2 Eggs, slightly beaten
1 lb Bacon
Melt butter in the water; stir in stuffing, add the rest of the
ingredients. Chill for 1 hour. Shape into walnut size balls. Cut
bacon into 4 pieces and wrap balls, securing with toothpicks. Bake at
375 degrees for 30 to 35 minutes.
