Vickis Zucchini Bread Recipe

Ingredients:
3: Eggs,
1 cup: Oil,
2 1/2 cup: Sugar,
2 cup: Zucchini, shredded, 2 small zukes
2 tsp: Cinnamon, ground
1 tsp: Baking soda,
1/4 tsp: Baking powder,
1 tsp: Salt,
3 cup: Flour, sifted
1 1/2 cup: Walnuts, chopped, or more

Directions:
Preheat oven to 350 degrees F. Beat eggs till foamy; add oil and
sugar gradually, continuing to beat. Stir in zucchini.

Stir together the cinnamon, baking soda and powder, salt and flour.
Add to zucchini mixture, stirring JUST TILL BLENDED. Stir in nuts.
Turn into greased tube pan and bake in pre-heated oven for about 1
hour. Cool on rack for 10 minutes; turn out of pan and cool before
slicing.
